Ingredients

  • 3 1/2 cups ground beef, browned and drained
  • 6 oz. box long grain wild rice (uncooked)
  • 1 packet rice seasoning (from the rice box)
  • 10 oz. can cream of chicken soup
  • 10 oz. can cream of mushroom soup
  • 1 cup milk
  • 1 cup hot water
  • 4 oz. can sliced mushrooms (liquid reserved)
  • 1 medium onion, chopped
  • 4.5 oz. oyster crackers (half of a 9 oz. package)
  • 1/2 stick (4 Tbsp) butter, room temperature

Instructions

  1. Mix Liquids: In a large mixing bowl, whisk together the rice seasoning packet, milk, and hot water.
  2. Add Soups & Veggies: Stir in the liquid from the canned mushrooms, the cream of chicken soup, and the cream of mushroom soup until smooth.
  3. Combine Base: Mix in the uncooked rice, chopped onion, sliced mushrooms, and the browned ground beef until everything is well incorporated.
  4. Prepare Topping: In a separate bowl, toss the oyster crackers with the softened butter until they are well coated.
  5. Assemble: Grease a 9x13-inch baking pan. Pour the beef and rice mixture into the pan and spread it out evenly. Top the casserole with the buttered oyster crackers.
  6. Bake: Bake at 325°F for 1 hour.

Notes

Tammy’s Tips The oyster crackers provide a delightful, old-fashioned crunch that is different from your typical breadcrumb or fried onion topping! If you're browning your beef ahead of time, make sure it's drained well so the casserole doesn't get too oily. This is a very filling dish that pairs perfectly with a simple side salad.
