Ingredients

  • 1 lb. Swaggerty’s Farm Italian sausage
  • 2 cups cooked pasta, drained
  • 1/4 cup onion, sliced
  • 1 cup squash or zucchini, sliced
  • 1/2 cup diced tomatoes, drained
  • 1 cup mozzarella cheese, shredded (divided)
  • 1/4 cup fresh grated parmesan
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/2 tsp black pepper

Instructions

  1. Brown the Meat: In a large skillet over high heat, brown the Italian sausage, breaking it into small pieces as it cooks.
  2. Add Veggies: After 5 minutes, add the sliced onions and cook for another 3 minutes. Stir in the sliced squash or zucchini, lower the heat, and simmer for about 4 minutes.
  3. Transfer: Move the sausage and vegetable mixture into a greased 13x9x2-inch casserole dish.
  4. Make the Sauce: In the same skillet, melt the butter. Stir in the flour and black pepper, whisking until the roux is slightly browned. Gradually add the milk and cook, stirring constantly, until the sauce is thickened and bubbly.
  5. Combine: Stir 1/2 cup of the mozzarella into the sauce until melted. Add the drained tomatoes and cooked pasta to the sauce, mixing well.
  6. Assemble & Bake: Pour the pasta and sauce mixture over the sausage in the casserole dish. Top with the remaining 1/2 cup of mozzarella and the shredded parmesan.
  7. Cook: Bake at 350°F for 50 minutes until the top is golden and bubbly.
