Mini Cheesecakes - Master Cookbook Recipe # 209
These mini cheesecakes are the perfect bite-sized treat for parties, holidays, or a quick weeknight dessert. Using a vanilla wafer as a built-in crust makes them incredibly easy to assemble, and the creamy, smooth cheesecake filling pairs perfectly with any fruit topping you choose. They are simple, classic, and always a crowd favorite!

Ingredients
- 2 (8 oz.) packages cream cheese, room temperature
- 2 large eggs
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 12 Vanilla Wafers (Nabisco brand recommended)
- Pie filling of your choice (Cherry, Blueberry, Strawberry, etc.)
- Mini foil baking cups
Instructions
- Prepare the Pan: Line a standard muffin tin with 12 mini foil baking cups. Place one vanilla wafer at the bottom of each cup to serve as the crust.
- Mix the Filling: In a large bowl, combine the room-temperature cream cheese, eggs, sugar, and vanilla. Beat on high speed until the mixture is completely smooth and creamy.
- Fill: Divide the cheesecake mixture evenly among the 12 muffin cups, pouring right over the wafers.
- Bake: Bake at 350°F for 20 minutes, or until the centers are set.
- Cool & Top: Allow the cheesecakes to cool completely in the pan. Once cooled, top each one with a spoonful of your favorite pie filling.
Notes
Tammy's Tip: For a fun chocolate twist, try using Oreo Thin cookies at the bottom instead of vanilla wafers and garnish the top with a mini-Oreo!
