Ingredients

  • Carrot Cake Base:
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups carrots, finely grated
  • Cream Cheese Swirl:
  • 16 oz (2 blocks) cream cheese, room temperature
  • 2 Tbsp all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup milk

Instructions

  1. Prep and Mix Cake: Preheat your oven to 325°F. In a large bowl, whisk together the flour, sugar, cinnamon, baking soda, nutmeg, and salt. Add the oil, eggs, and vanilla, then beat for 2 minutes on medium speed. Stir in the grated carrots by hand.
  2. Pan Prep: Pour the carrot cake batter into a greased 13x9x2-inch baking pan.
  3. Prepare Swirl: In a separate bowl, mix the cream cheese, flour, sugar, and milk until the mixture is completely smooth.
  4. Create the Marble: Drop spoonfuls of the cream cheese mixture over the cake batter. Use a flat utensil to swirl the two together in both directions for a marbled effect.
  5. Bake: Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the bars to cool completely before cutting into squares and serving.
