Meatloaf, Mama's - Master Cookbook Recipe # 63
This is a true Southern classic. Mama’s recipe uses saltine crackers and onion soup mix to ensure a perfectly seasoned, moist loaf every time. It’s the kind of meal that brings everyone to the table.

Ingredients
- 1.5 lbs. ground beef
- 2 eggs
- 1/2 sleeve saltine crackers (crushed)
- 1 package Lipton Onion Soup Mix (or 2 Tbsp)
- 5 to 6 dashes Worcestershire sauce
- 1/2 tsp Badia roasted garlic powder (or regular garlic powder)
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Mix: In a large bowl, combine the ground beef, eggs, crushed saltines, onion soup mix, Worcestershire sauce, garlic powder, salt, and pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
- Shape: Place the mixture into a loaf pan, pressing it down evenly.
- Initial Bake: Bake in a preheated 375°F oven for 40 minutes.
- Drain: Remove the meatloaf from the oven and carefully drain off any excess grease from the pan.
- Top and Finish: Apply your favorite meatloaf topping (like the one in Recipe #64) and return it to the oven for an additional 15 minutes until the topping is set and the meat is fully cooked.
Notes
Tip: Be sure to use garlic powder rather than garlic salt, as the onion soup mix and saltines already provide plenty of sodium for the dish!
