Macaroni Delight - Master Cookbook Recipe # 321
This dish is pure nostalgia! A classic recipe from Tammy's "Maw Maw," this creamy, cheesy macaroni bake is a beloved holiday staple. The combination of savory mushrooms, pimientos, and sharp cheddar creates a rich flavor profile that's perfect for Thanksgiving or any family Sunday dinner.
This is recipe #321 in Tammy’s Master Cookbook.
Ingredients
- 8 oz. macaroni noodles
- 1 cup mayonnaise
- 10.5 oz. can cream of mushroom soup
- 8 oz. sharp cheddar cheese, grated
- 2 oz. jar diced pimientos, drained
- 1/4 cup onion, finely chopped
- 1/4 cup green pepper, chopped
- Olive oil (for sautéing)
Instructions
- Boil Pasta: Cook the macaroni according to the package directions. Drain well and set aside.
- Sauté Aromatics: In a skillet, sauté the finely chopped onion and green pepper in a little olive oil until they are soft and translucent.
- Create the Sauce: Stir the cream of mushroom soup, drained pimientos, and mayonnaise into the skillet with the vegetables. Heat through until the mixture is smooth and well combined.
- Combine: Fold the cooked noodles into the sauce, then stir in the grated sharp cheddar cheese.
- Assemble: Transfer the mixture into a greased 2-quart casserole dish. (If you want to feed a larger crowd using a 13x9 pan, simply double all the ingredients!)
- Bake: Bake at 350°F for 45 minutes until the cheese is bubbly and the top is slightly golden.
Notes
Tammy’s Tips The mayonnaise might sound unusual for a baked pasta, but it’s the secret to that incredibly creamy, old-fashioned texture. For the best flavor, always grate your own sharp cheddar from a block!
