Lemon Teacake Cookies - Master Cookbook Recipe # 350

These Lemon Teacake Cookies are a bright and citrusy delight. Soft, light, and surprisingly low in sugar, they have a wonderful teacake texture that makes them perfect for a snack or a light dessert. Just be careful,as Tammy warns, they are so good you might not be able to stop eating them!

Ingredients

  • Juice of one large lemon
  • 1 1/2 tsp lemon extract
  • 1 tsp vanilla extract
  • 1 cup vegetable shortening
  • 2 cups granulated sugar
  • 1/2 tsp salt
  • 3 large eggs
  • 4 1/2 cups self-rising flour
  • (Optional: Zest of one lemon and powdered sugar for coating

Instructions

  1. Prep: Preheat your oven to 375°F and grease a baking sheet or line it with parchment paper.
  2. Cream Shortening and Sugar: In a large bowl, beat the shortening and granulated sugar together until the mixture is light and fluffy.
  3. Add Flavors: Mix in the lemon extract, vanilla extract, fresh lemon juice, and salt. (If using lemon zest, beat it in now!)
  4. Incorporate Eggs: Add the eggs one at a time, beating well after each addition to ensure a smooth batter.
  5. Add Flour: Gradually stir in the self-rising flour until a soft dough forms.
  6. Form Cookies: Drop tablespoonfuls of the dough onto your prepared baking sheet, spacing them about 1-1/2 inches apart.
  7. Bake: Bake for 12 minutes for a lighter, softer cookie, or 13 to 14 minutes if you prefer them a bit darker and crisper.
  8. Finish: Once cooled, you can toss them in a gallon storage bag with some powdered sugar and shake to coat. Store in a sealed container.

Tammy’s Tips

"Warning: you won’t stop eating these until they are gone, but the upside is they are low in sugar." For an extra pop of bright lemon flavor, don't skip adding that fresh lemon zest to the batter. These cookies have a classic, old-fashioned teacake feel that pairs perfectly with a glass of cold milk or a cup of hot tea!
