  • 4 oz. cream cheese, room temperature
  • 1/2 cup powdered sugar
  • 1 cup whipped topping
  • Lemon zest (from 1 lemon, divided)
  • The Pudding Layer
  • 3.4 oz. box lemon instant pudding mix
  • 1 cup milk
  • 1 lemon, juiced
  • Remaining whipped topping (from 8 oz. tub)

Instructions

  1. Prepare Pecans: Preheat oven to 350°F. Toast whole pecans for 7 minutes, then chop and set aside.
  2. Create Cream Layer: In a mixing bowl, blend the room-temperature cream cheese and powdered sugar until creamy. Add 1 cup of whipped topping and mix well.
  3. Assemble First Layer: Spread the cream cheese mixture evenly into the bottom of the graham cracker crust. Zest a lemon over this layer, reserving a little zest for the final garnish.
  4. Prepare Pudding: In a separate bowl, whisk together the lemon instant pudding mix and 1 cup of milk. Stir in the fresh lemon juice.
  5. Assemble Second Layer: Pour the lemon pudding over the cream cheese layer, spreading it to the edges.
  6. Top and Garnish: Cover the pudding layer with the remaining whipped topping. Sprinkle the reserved lemon zest and the toasted, chopped pecans over the top.
