Ingredients

  • Pre-Bake Crust:
  • 1/2 cup salted butter, room temperature
  • 1/4 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1/4 tsp salt
  • Zest of one lemon
  • Filling:
  • 2 large eggs
  • 1 cup granulated sugar
  • Juice of two lemons
  • Zest of one lemon
  • 2 Tbsp all-purpose flour
  • 1/4 tsp salt
  • Extra powdered sugar and one lemon (for serv

Instructions

  1. Prep and Bake Crust: Preheat your oven to 350°F. In a mixing bowl, cream together all the crust ingredients. Spread the dough evenly into a 7x11 or 9x9-inch baking pan. Bake for 20 minutes, then set aside.
  2. Prepare Filling: In a separate bowl, combine the filling ingredients. Beat the mixture thoroughly and quickly to ensure the sugar is well incorporated and doesn't settle at the bottom.
  3. Final Bake: Pour the lemon filling over the warm, pre-baked crust. Return to the oven and bake for another 25 minutes.
  4. Cool: Allow the bars to cool completely in the pan.
  5. The Finishing Touch: To serve, take a fresh lemon and roll it on the counter to soften it. Poke a small hole in the lemon and drizzle a little fresh juice over the bars.
  6. Serve: Generously sprinkle with powdered sugar, cut into squares, and enjoy!

Make sure you beat that filling really well right before you pour it onto the crust so the sugar stays suspended,this gives you that perfect, even lemon layer. These bars are best enjoyed within two days and can be stored in an airtight container at room temperature, though they'll last up to a week if you keep them in the refrigerator!
