This is recipe #318 in Tammy’s Master Cookbook.
Ingredients
- For the Sauce:
- 1/2 lb. Italian sausage
- 4 oz. prosciutto, sliced
- 1/2 medium onion, chopped
- 3 Tbsp fresh parsley, washed and chopped
- 2 tsp ground rosemary
- 1 cup red wine
- 28 oz. can crushed tomatoes
- 14.5 oz. can petite diced tomatoes
- 2 garlic cloves, pressed
- For the Layers:
- 1 box lasagna noodles (al dente)
- Fresh mozzarella, grated
- Fresh parmesan, grated
- 1 tsp salt (for boiling water)
Instructions
- Brown the Meats: In a large skillet or pot, brown the Italian sausage and prosciutto together.
- Sauté Aromatics: Add the onion, fresh parsley, and ground rosemary to the skillet and sauté for about 5 minutes until the onions are soft.
- Deglaze: Pour in the red wine and cook on medium-high heat for 3 minutes.
- Simmer: Stir in both cans of tomatoes. Let the sauce simmer for 20 minutes to allow the flavors to meld. Just before removing from the heat, stir in the pressed garlic.
- Cook Pasta: Boil your lasagna noodles according to package directions until al dente. Be sure to add 1 tsp of salt to the water! Tip: Do not use "no boil" pasta for this recipe.
- Assemble: Spray a 13x9-inch baking dish with cooking spray. Layer the lasagna starting with sauce, then noodles, followed by parmesan and mozzarella. Repeat until all ingredients are used.
- Bake: Bake at 350°F for 50 minutes or until the cheese is golden and the sauce is bubbly.
Notes
Tammy’s Tips The key to this lasagna is the fresh herbs and the red wine,it really elevates the canned tomatoes into a gourmet sauce. Serve this with a warm loaf of garlic bread and a side salad for the perfect Sunday dinner. For the best flavor, grate your own cheese rather than buying the pre-shredded kind!
