By combining savory onion soup mix with a unique blend of orange juice and cooking sherry, you create a rich, flavorful gravy that cooks the rice and chicken to perfection. It's a hands-off meal that lets you spend your time anywhere but the kitchen.

Ingredients

  • 6-8 chicken legs (skin on)
  • 1 1/2 cups uncooked rice
  • 2-10.5 oz. cans cream of mushroom soup
  • 1 envelope Lipton onion soup mix
  • 1/3 cup cooking sherry
  • 1 cup orange juice
  • 1/2 cup water
  • Olive oil (for browning and greasing)

Instructions

  1. Prepare Sauce: In a medium bowl, whisk together the cream of mushroom soup, cooking sherry, orange juice, and water until smooth.
  2. Brown Chicken: Lightly grease a 13x9-inch casserole dish with oil. In a hot skillet with a lid, brown the chicken legs on all sides in a little olive oil. Use the lid to prevent splattering. Once browned, turn off the heat.
  3. Combine: Pour the chicken drippings from the skillet into your soup mixture and whisk again. Stir the uncooked rice into the soup mixture.
  4. Assemble: Immediately pour the rice and soup mixture into the prepared casserole dish, spreading the rice as evenly as possible. Arrange the browned chicken legs on top.
  5. Season & Bake: Sprinkle the envelope of onion soup mix over the top of the chicken. Cover the dish tightly (this is crucial to keep the moisture in for the rice).
  6. Cook: Bake at 350°F for 1.5 hours.

Notes

Tammy’s Tips The orange juice might sound surprising, but it provides a wonderful brightness to the savory mushroom gravy! Crucial Step: Do not bake this uncovered. The rice needs every bit of that liquid to cook through. If you’re in a real rush, you can skip browning the chicken and bake it raw for 2 hours, or just toss everything in a slow cooker on low for 4 hours.
