This famous, restaurant-quality dish features golden-seared chicken breasts bathed in a rich, creamy sauce with sun-dried tomatoes, parmesan, and fresh herbs. It’s so delicious it’s rumored to be worthy of a marriage proposal, making it a perfect choice for special occasions or a fancy weeknight meal.
This is recipe #535 in Tammy’s Master Cookbook.
Ingredients
- 3 Tbsp extra-virgin olive oil (divided)
- 4 boneless, skinless chicken breasts
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
- 2 cloves garlic, finely chopped
- 1 Tbsp fresh thyme leaves
- 1 tsp crushed red pepper flakes (optional)
- 3/4 cup chicken broth
- 1/2 cup chopped sun-dried tomatoes
- 1/2 cup heavy cream
- 1/4 cup finely grated parmesan
- Torn fresh basil (for serving)
Instructions
- Sear the Chicken: In a large non-stick skillet over medium-high heat, add a little of the olive oil. Season the chicken breasts generously with salt and pepper. Cook for about 5 minutes per side until they reach a beautiful golden brown. Once browned, transfer the chicken to a plate.
- Sauté Aromatics: In the same skillet, reduce the heat to medium and add the remaining 2 Tbsp of oil. Stir in the chopped garlic, thyme, and red pepper flakes. Cook for about 1 minute until the mixture is fragrant.
- Create the Sauce: Stir in the chicken broth, sun-dried tomatoes, heavy cream, and Parmesan cheese. Season with an extra pinch of salt. Bring the sauce to a gentle simmer.
- Finish Cooking: Return the chicken (and any juices from the plate) back into the skillet. Cover with a lid, turn the heat down to low, and cook for 10 to 12 minutes. The chicken is done when it’s cooked through and the juices run clear (internal temp of 165°F).
- Serve: Arrange the chicken on a serving platter, spoon that rich, creamy sauce over the top, and garnish with fresh torn basil.

Tammy's Tips
For the best results, try using chicken cutlets or pounding your chicken breasts to an even thickness so they cook through perfectly at the same time. If you want an even deeper flavor, you can use a splash of the oil from the sun-dried tomato jar when searing your chicken. This dish is wonderful served over a bed of angel hair pasta or with a side of crusty bread to make sure you get every last drop of that creamy sauce!
