Georgia Cracker Salad

Ingredients

  • 2 packs Saltine Crackers (or 2/3 box of Premium Minis)
  • 1 cup Onion, chopped
  • 1 cup Green Bell Pepper, chopped
  • 1 small Cucumber, chopped
  • 1 Tomato, chopped
  • 1/4 cup Pickles, chopped (Sweet or Dill)
  • 1 jar Pimentos, drained and chopped
  • 5 Hard-boiled Eggs, chopped
  • 1/2 cup Mayonnaise
  • 1/2 cup Ranch Dressing
  • 1/2 tsp Black Pepper

Instructions

  1. Prep the Base: In a large mixing bowl, combine the chopped onion, bell pepper, cucumber, tomato, pickles, pimentos, and hard-boiled eggs.
  2. Make it Creamy: Add the mayonnaise, ranch dressing, and black pepper to the vegetable mixture. Stir until everything is well blended and creamy.
  3. The Final Crunch: Just before serving, add the saltine crackers to the bowl. Fold them in gently until they are well coated.
  4. Serve: Enjoy immediately while the crackers still have that signature crunch!

Notes

  • Make it Your Own: This recipe is very flexible! Feel free to omit or add vegetables to your liking.
  • Cheesy Twist: Try adding a handful of shredded cheddar cheese for extra flavor.
