Cornbread Salad - Master Cookbook Recipe # 559
This colorful, layered salad is a Southern classic and a fantastic way to use up leftover cornbread. The combination of sweet corn, crispy bacon, and tangy ranch dressing makes it a guaranteed hit at any potluck or family gathering.

Ingredients
- 2 lbs. tomatoes, peeled and chopped
- 2 or 3 cups cooked cornbread, crumbled
- 3 cups kernel corn
- 5 medium green peppers, finely chopped
- 4 ribs of celery, finely chopped
- 1/2 onion, chopped
- 6 slices crisp cooked bacon, crumbled
- Buttermilk ranch dressing (or dressing of your choice)
- Wine vinegar
- Salt & black pepper to taste
- 1/3 cup fresh parsley, chopped (optional)
- Optional Add-ins: Chopped boiled eggs, green onions, shredded cheese, sour cream, or pinto beans.
Instructions
- Prep Vegetables: Wash and chop all vegetables. If the tomatoes are very juicy, drain them slightly after chopping so the salad doesn't get soggy.
- Start Layering: Using a clear trifle bowl (to show off the layers), place half of the crumbled cornbread on the bottom.
- Build Layers: Top the cornbread with half of the chopped onion, followed by the green peppers, celery, and tomatoes.
- Season: Sprinkle the tomato layer with salt, black pepper, and a splash of wine vinegar.
- Add Corn & Dressing: Add the kernel corn, then drizzle generously with the buttermilk ranch dressing.
- Repeat: Repeat the layers once more, ending with a final layer of dressing.
- Garnish: Top the salad with the crumbled bacon and fresh parsley.
- Chill: Cover and refrigerate for 2 to 3 hours. This allows the flavors to meld and the cornbread to absorb some of the dressing.
- Serve: Toss the salad gently just before serving.
