Ingredients

  • 1 Standard Pie Crust (unbaked)
  • 1/2 cup Salted Butter (1 stick), melted
  • 3/4 cup Sugar
  • 1/4 tsp Salt
  • 3 Large Eggs (see note for deep dish)
  • 1/4 cup Buttermilk (see note for deep dish)
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Flaked Coconut

Instructions

  1. Preheat & Prep: Preheat your oven to 325°F.
  2. Melt & Mix: In a glass bowl, melt the stick of butter in the microwave. Add the sugar and salt, then whisk together.
  3. Combine: Add the eggs, buttermilk, and vanilla extract. Whisk the mixture well until fully combined.
  4. Assemble: Place the flaked coconut evenly at the bottom of your unbaked pie shell. Pour the liquid mixture over the coconut.
  5. Bake: Place in the oven and bake for 1 hour until the custard is set and the top is golden brown.

Notes

Tammy’s Tips

For Deep Dish or 9" Pies: To ensure your pie is nice and full, use 4 eggs instead of 3 and increase the buttermilk to 1/2 cup.

Serving Suggestion: This pie is delicious warm, but it slices most beautifully once it has had a chance to cool and set!
