Ingredients

  • 1 Pie Crust (9-inch)
  • 1/2 stick Butter (melted)
  • 3/4 cup Sugar
  • 2 Large Eggs
  • 2 tbsp Cornmeal (we use White Lily!)
  • 1 tbsp All-Purpose Flour
  • 1/2 cup Evaporated Milk
  • 1/2 tbsp White Vinegar
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 375°F.
  2. Mix your melted butter, sugar, flour, and cornmeal.
  3. Whisk in eggs, evaporated milk, vinegar, and vanilla until smooth.
  4. Pour into your pie crust and bake until the center is set (not jiggly!), about 30-35 minutes.
  5. Let it cool completely before slicing to get that perfect set!

Tammy's Tips:


The Crust: If you're using a 9-inch pie plate (instead of the traditional 8-inch), you might want to make a recipe and a half if you prefer a thicker filling.

The Set: Let the pie cool completely before slicing! This is crucial for getting that "perfect set" so it doesn't run.
