Tammy has been told this is the best egg sandwich ever, and it's all about the technique. By broiling the bread and breaking the yolk, you create a perfectly toasted, gooey, and savory sandwich that beats any fast-food version.

Ingredients

  • 2 slices Bread
  • 1 large Egg
  • 1 slice Cheese (your favorite variety)
  • To taste Salted butter (room temperature)
  • To taste Salt and black pepper
  • Optional: Mayonnaise or preserves (grape or strawberry)

Instructions

  1. Toast the Bread: Spread room-temperature butter on one side of each slice of bread. Place them under the broiler on low until they are a beautiful golden brown. Keep a close eye on them so they don't burn!
  2. Fry the Egg: While the bread is toasting, melt a little butter in a small non-stick skillet over medium heat. Crack the egg into the skillet and season with salt and pepper.
  3. Break the Yolk: Use your spatula to break the yolk and spread it slightly. Cook the egg until it is set on the bottom, then flip and cook until set on the other side.
  4. Assemble: Take your toasted bread and place the slice of cheese on the untoasted side of one slice. Place the hot egg directly onto the cheese to help it melt.
  5. Finish: If you like, add a swipe of mayonnaise or even fruit preserves to the other slice of bread. Close the sandwich and cut it diagonally before serving.
