This Shortcut Hummingbird Cake is a delightful tropical treat that combines the flavors of banana, pineapple, and coconut into one moist and tender Bundt cake. Traditionally a labor-intensive recipe, this version uses a coconut cake mix as a base to save time without sacrificing that classic Southern taste. Ingredients

  • 1 box Coconut Supreme cake mix
  • 3/4 cup Vegetable oil
  • 1/4 cup Water
  • 3 Large eggs (room temperature)
  • 1 tsp Vanilla extract
  • 2 Medium ripe bananas (mashed)
  • 1/2 cup Flaked coconut (Baker’s brand recommended)
  • 8 oz. can Crushed pineapple (with juice)
  • 1/2 cup Chopped pecans

Instructions

  1. Prep Oven & Pan: Preheat your oven to 325°F. Thoroughly grease and flour a standard Bundt pan.
  2. Mix Base: In a large mixing bowl or stand mixer, combine the cake mix, oil, water, and eggs. Beat on medium speed for 2 minutes.
  3. Add Flavor: Add the vanilla extract, mashed bananas, flaked coconut, crushed pineapple (including the juice), and chopped pecans. Mix for one more minute until everything is evenly distributed.
  4. Bake: Pour the batter into the prepared Bundt pan. Bake at 325°F for 45 minutes.
  5. Test: Use a cake tester or toothpick to ensure the center is clean before removing it from the oven.
  6. Cool: Allow the cake to cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
