Cucumber Salad Sandwiches - Master Cookbook Recipe # 29

These delicate and refreshing sandwiches are a staple for Southern teas, showers, or a light summer lunch. The combination of cool cucumber, zesty onion, and tangy cream cheese makes for a spread that is both simple and sophisticated.

This is recipe #29 in Tammy’s Master Cookbook.

Ingredients

  • 1 seedless cucumber, diced
  • 8 oz. cream cheese, room temperature
  • 2 Tbsp grated onion
  • 2 tsp vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • White or dark bread (thinly sliced)
  • Pimento & Parsley (for garnish, optional)

Instructions

  1. Prep Cucumber: After dicing the cucumber, pat the pieces dry with a paper towel. This is a key step to prevent the spread from becoming watery.
  2. Make the Spread: In a medium bowl, combine the diced cucumber, room-temperature cream cheese, grated onion, vinegar, salt, and pepper. Mix until smooth and well combined.
  3. Chill (Optional): For the best flavor, let the spread chill in the refrigerator for about 30 minutes before assembling.
  4. Assemble:
  5. Traditional: Spread a generous layer of the mixture onto a slice of bread and top with a second slice. Trim the crusts and cut into triangles or finger shapes.
  6. Open-Faced: Use a biscuit or cookie cutter to cut rounds from the bread. Top each round with a dollop of the cucumber spread.
  7. Garnish: For a beautiful presentation, top each sandwich with a small piece of pimento or a sprig of fresh parsley.

Notes

  • No Soggy Sandwiches: Ensuring you use a "seedless" (English) cucumber and patting it dry keeps the bread nice and firm.
  • The Bread: Use thinly sliced bread for a more delicate, professional "tea sandwich" look.
  • Make it Fancy: If you are serving these for an event, using a mix of both white and dark (pumpernickel or wheat) bread creates a lovely visual contrast on your serving platter.
