Coffeecake, Cherry - Master Cookbook Recipe # 181

This Cherry Coffee Cake is a clever way to turn a box of cake mix into a sophisticated, yeast-risen breakfast treat. With vibrant rows of cherry filling and a buttery streusel topping, it’s as beautiful to look at as it is to eat.

Ingredients

  • 1 pkg. White cake mix
  • 1/4 oz. (2 1/4 tsp) Dry yeast
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 2/3 cup Warm water
  • 21 oz. can Cherry pie filling
  • 1/4 cup Salted butter (room temperature)
  • 2 Tbsp Granulated sugar
  • 8 oz. Cream cheese, cubed (optional)

Instructions

  1. Prep Oven & Pan: Preheat your oven to 375°F (or 350°F if using a convection oven). Grease a 13x9-inch baking pan.
  2. Reserve Mix: Take 1/2 cup of the dry white cake mix and set it aside in a separate small bowl for the streusel.
  3. Make the Dough: In a large bowl, combine the remaining cake mix, yeast, flour, eggs, and warm water. Mix until the dough is well blended. Spread the mixture evenly into the greased pan.
  4. Create Streusel: In the bowl with the reserved cake mix, add the room-temperature butter and the 2 tablespoons of sugar. Mix until the mixture becomes crumbly.
  5. Layer Toppings: Spoon the cherry pie filling onto the dough in three even rows. If you're using cream cheese, place the cubes on top of the cherry rows. Sprinkle the crumbly streusel mixture in four rows between and around the cherries.
  6. Bake: Bake for 30 minutes until the edges are golden and the dough is cooked through.

  • The Cream Cheese Twist: Adding the cubed cream cheese provides a wonderful "Danish" style flavor that cuts through the sweetness of the cherries.
  • Warm Water Temperature: Ensure your water is warm (about 100°F,110°F),not hot,to properly activate the yeast without killing it.
  • Versatile Fruit: While cherry is a classic, you can easily swap the pie filling for blueberry, apple, or peach to change up the flavor!
