Coffee Cake, Banana - Master Cookbook Recipe # 179

This isn't your ordinary banana bread! By using sour cream and self-rising flour, this cake achieves a light, moist crumb, while the cinnamon-nut topping adds a delightful crunch. It’s the perfect way to use up those ripe bananas for a breakfast treat or a dessert.

Ingredients

  • The Batter:
  • 1/2 cup Butter
  • 1 cup Sugar
  • 2 Eggs
  • 3 Ripe bananas, mashed
  • 1 tsp Vanilla
  • 1/2 cup Sour cream
  • 1/2 tsp Cinnamon
  • 2 cups Self-rising White Lily flour
  • The Topping:
  • 1 cup Chopped nuts (pecans or walnuts work great)
  • 1/2 cup Brown sugar
  • 1 tsp Cinnamon

Instructions

  1. Prep Topping & Oven: Preheat your oven to 350°F. In a small bowl, combine the chopped nuts, brown sugar, and cinnamon. Set this topping mixture aside.
  2. Cream Butter & Sugar: In a large mixing bowl, cream the butter. Gradually add the sugar and continue to cream until light and fluffy.
  3. Add Wet Ingredients: Beat in the eggs one at a time. Mix in the mashed bananas, vanilla, cinnamon, and sour cream until well combined.
  4. Incorporate Flour: Add the self-rising flour and mix until the batter is well blended and smooth.
  5. Assemble: Pour the batter into a well-greased tube pan. Sprinkle the prepared nut and sugar topping evenly over the top of the batter.
  6. Bake: Bake for 45 minutes. Check for doneness by inserting a cake tester or toothpick; it should come out clean.
  7. Cool: Allow the cake to cool on a rack for 10 minutes. Since this cake features a delicious top crust, it is best served right out of the pan.

  • White Lily Secret: Using White Lily self-rising flour is a Southern tradition that results in a much lighter, fluffier texture compared to standard all-purpose flours.
  • The Riper the Better: Use bananas that are heavily spotted or even turning black. They are much sweeter and easier to mash, which provides the best banana flavor.
  • Serving Suggestion: This cake is wonderful served warm with a cup of coffee or a cold glass of milk. Because of the topping, simply slice it while it's in the tube pan and lift the pieces out carefully.
