Coconut Hack Cake, Mama's - Master Cookbook Recipe # 212
This hack turns a simple frozen cake into a decadent, moist Southern classic that your guests won't believe started with a store-bought base.

Ingredients
- 1 Pepperidge Farm frozen three-layer cake (Lemon or Coconut flavor)
- 2 (6 oz.) bags fresh frozen coconut (thawed in refrigerator)
- 1/2 cup canned cream of coconut (or coconut milk)
- 2 Tbsp sugar (only if using coconut milk instead of cream of coconut)
Instructions
- Prepare the Coconut: In a medium bowl, mix the thawed frozen coconut with the cream of coconut. (If you are using coconut milk, stir in the 2 tablespoons of sugar at this step).
- Prep the Cake: While the cake is still cold, use a spatula to carefully lift the top layer off the frozen Pepperidge Farm cake.
- Fill: Spread a generous layer of the coconut mixture over the exposed middle layer.
- Assemble & Coat: Place the top layer back on. Pile the remaining coconut mixture over the top and down the sides of the cake, pressing it gently so it sticks to the original frosting.
- Chill & Set: Wrap the cake tightly with plastic wrap and refrigerate. This step is crucial,it allows the cake to thaw completely and soak up the sweetness and moisture from the fresh coconut.
Notes
Tammy's Tip: Never thaw your frozen coconut in the microwave! Let it thaw naturally in the refrigerator to keep that fresh, bright texture and flavor.
