Fresh Coconut Cake, Mama's - Master Cookbook Recipe # 218

This is the ultimate Southern tradition,a towering, four-layer masterpiece that is as beautiful as it is delicious. This cake is all about the layers: a delicate homemade white cake, a rich and moist coconut filling that soaks into the layers, and a fluffy "7-minute" style frosting.

This is recipe #218 in Tammy’s Master Cookbook.

Ingredients

  • The Components:
  • The Cake: Prepare Master Cookbook Recipe # 219 (White Cake Recipe), divided and baked into four round cake pans.
  • The Filling: Prepare Master Cookbook Recipe # 220 (Fresh Coconut Filling).
  • The Frosting: Prepare Master Cookbook Recipe # 221 (Fluffy White Frosting).

Instructions

  1. Bake: Bake your four white cake layers according to the instructions in Master Cookbook Recipe # 219. Allow them to cool completely.
  2. Fill: Place the first layer on your cake stand. Spread a generous amount of the coconut filling from Master Cookbook Recipe # 220 over the top. The moisture from the filling will soak into the cake, making it incredibly tender. Repeat with the remaining layers.
  3. Frost: Once stacked, cover the top and sides of the entire cake with the fluffy frosting from Master Cookbook Recipe # 221.
  4. Finish: Press extra fresh coconut into the frosting all over the cake for that classic "snowball" look.

Notes

The Secret Step: For the very best results, wrap the cake gently and let it sit in the refrigerator for at least 24 hours before serving. This allows the coconut milk and filling to fully penetrate the cake layers.
