Chicken Noodle Casserole - Master Cookbook Recipe # 310
This is one of the most comforting and flavorful casseroles you'll ever make! It features a rich, homemade creamy gravy, tender vegetables, and a unique addition of hard-boiled eggs that adds a wonderful heartiness to the dish.

Ingredients
- 2 cups macaroni noodles, cooked
- 2 cups cooked chicken, diced or shredded
- 4 large eggs, hard-boiled and peeled
- 1 small green pepper, chopped
- 1 small onion, chopped
- 1/4 cup salted butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 Tbsp chicken bouillon granules
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 oz. can diced mushrooms, drained
- 2 oz. can diced pimentos, drained
- 1 cup shredded cheese
Instructions
- Prep Noodles & Eggs: Boil the macaroni and eggs together in salted water for 10 minutes. Remove the eggs to an ice bath to peel; drain the pasta.
- Sauté Veggies: In a large skillet, sauté the onion and green pepper in the butter until soft. Remove the vegetables with a slotted spoon, keeping as much butter in the skillet as possible.
- Make Gravy: Whisk the bouillon into the milk. In the skillet with the remaining butter, whisk in the flour, salt, and pepper. Gradually add the milk mixture and cook until thickened into a smooth gravy.
- Combine: Remove the gravy from the heat. Stir in the sautéed vegetables, mushrooms, and pimentos. In a large bowl, toss the cooked macaroni with the gravy mixture.
- Layer: Spray a 13x9-inch baking dish with cooking spray. Pour half of the noodle mixture into the dish. Top with three sliced hard-boiled eggs, then cover with the remaining noodle mixture.
- Top & Bake: Slice the last egg on top and sprinkle evenly with the shredded cheese. Bake at 350°F for 30 minutes, or until the cheese is melted and the casserole is bubbl

Tammy’s Tips "This would be great with chicken, turkey, or even tuna,it is absolutely delicious! It's one of the best casseroles I have ever made, but you must like boiled eggs or feel free to omit them if they aren't your favorite." Make sure to let the butter drain well from the veggies when you remove them from the skillet so you have plenty of fat left to make that perfect roux for the gravy!
