Take it Easy Chicken - Master Cookbook Recipe # 541

This recipe is exactly what the name implies,a super easy, simple meal that’s perfect for busy days. By baking bone-in chicken breasts in a savory mixture of mushroom soup, onion seasonings, and pimientos, you create a tender main dish with a rich, flavorful gravy that tastes like you spent hours in the kitchen.

Ingredients

  • Prep the Dish: Preheat your oven to 350°F. Thoroughly spray a deep round casserole dish, Dutch oven, or iron skillet with cooking spray.
  • Prepare the Chicken: If the chicken breasts are very thick, butterfly them slightly so they lie flatter in the dish. Place them in the prepared baking dish with the meat side down and the bone side facing up.
  • Mix the Gravy: In a medium bowl, combine the cream of mushroom soup, drained mushrooms, diced pimientos, chicken bone broth, and the onion soup mix. Stir until well combined.
  • Bake: Pour the gravy mixture evenly over the chicken. Cover the dish tightly with aluminum foil or an oven-safe lid. Bake for 1 hour.
  • Finish: Remove the foil or lid and continue baking for another 30 minutes. Ensure the chicken reaches an internal temperature of 170°F.
  • Serve: Plate the chicken and generously spoon the hot gravy over the top before serving.

Notes

Tammy's Tips

If you prefer a much thicker gravy to serve over potatoes or rice, simply reduce the bone broth to a half cup instead of a full cup. I always recommend using a meat thermometer for those extra-large chicken breasts to make sure they are perfectly cooked through while staying juicy. This is one of my favorite "set it and forget it" oven meals that the whole family will think is absolutely delicious!
