Chicken Biscuit Casserole - Master Cookbook Recipe # 308

This "all-in-one" comfort meal is like a chicken pot pie but even better! It features a savory homemade gravy, tender vegetables, and a unique, fluffy mayonnaise-based biscuit topping that bakes up perfectly golden and delicious.

Ingredients

  • 1 1/2 cups cooked chicken, chopped
  • 1 small onion, chopped
  • 2 stalks celery, diced
  • 2 medium carrots, chopped
  • 1/2 cup chicken stock (for steaming veggies)
  • 2 boiled eggs, chopped
  • 4 oz. jar chopped pimentos, drained
  • 1 can green peas, drained
  • 2 Tbsp butter
  • Homemade Chicken Gravy:
  • 5 Tbsp salted butter
  • 1 cup half & half
  • 3 heaping Tbsp cornstarch
  • 1 cup rich chicken stock
  • 1 Tbsp chicken bouillon granules
  • The Biscuit Topping:
  • 2 cups self-rising flour
  • 1/4 tsp McCormick poultry seasoning
  • 1/2 cup mayonnaise
  • 2/3 cup milk

Instructions

  1. Sauté Veggies: In a large skillet over medium heat, melt 2 Tbsp butter. Add the onion, celery, and carrots. Pour in the 1/2 cup chicken stock, cover, and steam until the vegetables are fork-tender.
  2. Make Gravy: In a separate small bowl, whisk together the cornstarch, bouillon, and half & half. In a preheated skillet, melt the 5 Tbsp butter, then stir in the stock and your cream mixture. Bring to a boil and cook until thick and bubbly.
  3. Combine: In a large bowl, mix the steamed veggies, cooked chicken, boiled eggs, pimentos, and peas. Pour the hot gravy over the top and stir well.
  4. Assemble: Pour the chicken mixture into a well-greased casserole dish.
  5. Mix Biscuits: In a medium bowl, combine the self-rising flour, poultry seasoning, mayonnaise, and milk. Stir until just combined.
  6. Bake: Drop the biscuit dough by the tablespoonful onto the top of the casserole. Bake at 350°F for 45 minutes until the biscuits are golden brown and the filling is bubbly.

Notes

Tammy’s Tips If you're in a hurry, you can swap the homemade gravy for 2 cans of cream of chicken soup and use frozen biscuits for the top. However, that homemade mayonnaise biscuit topping is what really makes this recipe special,the mayo makes them incredibly moist and tender!
