Caramel Icing, Stovetop - Master Cookbook Recipe # 409
This is the ultimate Southern caramel icing. While traditional versions are notoriously difficult to master, Tammy has perfected this recipe by adding corn syrup and powdered sugar to ensure a smooth, successful finish every time. It results in a rich, fudgy texture that is absolutely divine on a homemade layer cake.

Ingredients
- 1/2 cup salted butter
- 2 cups dark brown sugar
- 1 Tbsp corn syrup
- 1 cup evaporated milk
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Melt Butter: In a saucepan, melt the butter over low heat. Use a fork to coat the sides of the pot with the melted butter.
- Dissolve Sugar: Add the brown sugar, corn syrup, and evaporated milk. Bring to a gentle simmer on medium-low heat. Cook on simmer for about 4 minutes. Do not rush this; ensure all sugar granules are completely dissolved before it boils.
- Boil: Once the sugar is melted, increase the heat, cover the pot, and bring to a full boil. Cook until the icing reaches 234°F (soft ball stage).
- Cool: Remove from heat and let it sit undisturbed for 5 minutes.
- Beat: Transfer the mixture to a stand mixer. Beat at high speed while adding the vanilla extract, salt, and powdered sugar.
- Ice: Spread the icing on your cake immediately before it begins to set.

ammy's Tips
The Golden Rule: When pouring the caramel out of the saucepan, do not scrape the sides. Also, always use a clean utensil every time you stir to avoid introducing sugar granules that can cause the icing to crystallize. If the icing hardens too quickly in the bowl, use a stainless-steel spoon to scrape the sides and add a tiny drop of cream to loosen it back up.
