Bread Pudding Singles - Master Cookbook Recipe # 5

This cozy, single-serve dessert is the perfect way to turn a simple dinner roll into a rich, custard-filled treat. Using evaporated milk makes it incredibly creamy, and the air fryer gives it a beautiful golden top.

Ingredients

  • 2 Tbsp salted butter (divided)
  • 1 dinner-sized roll, cubed (or equivalent amount of bread)
  • 1 large egg
  • 1/3 cup evaporated milk
  • 2 Tbsp sugar (divided)
  • 1/4 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Cinnamon sugar (for dusting)

Instructions

  1. Prep Ramekins: Place one tablespoon of butter in a ramekin. Add your cubed bread pieces on top.
  2. Whisk Custard: In a small bowl, whisk together the egg, evaporated milk, one tablespoon of sugar, vanilla extract, cinnamon, and nutmeg.
  3. Soak: Pour the egg mixture over the bread in the ramekin. Let it sit for 20 minutes so the bread can fully absorb the custard.
  4. Top: Sprinkle the remaining tablespoon of sugar over the top and add the remaining tablespoon of butter.
  5. Air Fry: Place the ramekins in the air fryer. Bake at 300°F for 20 minutes.
  6. Test for Doneness: Insert a fork into the center. If you see runny milk or egg, cook for an additional 4 minutes at 280°F.
  7. Serve: Once finished, dust with cinnamon sugar while still warm.

Notes

Conventional Oven Method:

Place the ramekins on a baking sheet and bake at 350°F for 30 minutes or until set.
