Ingredients
- 1 cup self-rising flour
- 3 to 4 Tbsp salted butter (room temperature)
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 ripe banana (mashed with a fork)
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- Pinch of baking soda
- Topping: Streusel Topping (Master Cookbook Recipe # 151)
Instructions
- Prep the Base: In a mixing bowl, combine the room-temperature butter and self-rising flour using a blending fork until the mixture is crumbly.
- Dry & Wet Mix: Add the pinch of baking soda and stir. Then, incorporate the brown sugar, egg, vanilla extract, mashed banana, and buttermilk.
- Combine: Mix with a spoon until just combined. Fold in your pecans if using.
- Fill: Spoon the batter into greased muffin tins, filling each cup about three-quarters full.
- Topping: Sprinkle the tops with Master Cookbook Recipe # 151 Streusel (a mix of flour, brown sugar, butter, and pecans) for that extra crunch and sweetness.
- Bake: Place in a preheated oven at 375°F. Bake until the muffins are golden brown and set. Start checking them at the 30-minute mark. (You can also air fry a single "skillet muffin" for about 10 minutes!)
Notes
Tip: If the batter appears too dry, add a small splash of milk. Don't over-mix; it’s okay if the batter is a little lumpy!
