Banana Nut Muffins - Master Cookbook Recipe # 153
Using self-rising flour and oil ensures these muffins stay incredibly moist and tender. The mashed bananas provide natural sweetness and a beautiful aroma that fills the whole kitchen. If you're looking for a healthier alternative, you can simply omit the 1/2 cup of sugar and the streusel topping,the bananas provide plenty of flavor on their own!

Ingredients
- 2 cups self-rising flour
- 1 cup mashed ripe bananas (about 2-3 medium bananas)
- 1/2 cup milk
- 1/3 cup cooking oil
- 1 large egg
- 1/2 cup sugar (optional)
- 1/2 cup chopped nuts (pecans or walnuts)
- 1 tsp vanilla extract
- Topping: Streusel Topping (Master Cookbook Recipe # 151)
Instructions
- Mix: In a large mixing bowl, combine the self-rising flour, mashed bananas, milk, oil, egg, sugar (if using), chopped nuts, and vanilla. Stir until the ingredients are just blended,be careful not to over-mix!
- Fill: Grease a standard 12-cup muffin pan thoroughly. Distribute the batter evenly among all 12 cups.
- Top: For that extra special touch, sprinkle each muffin generously with your prepared Streusel Topping (Recipe #151).
- Bake: Bake at 350°F for 25 to 30 minutes.
- Test: The muffins are done when they are golden brown and a toothpick inserted into the center comes out clean.

Tammy’s Tip: "The darker those bananas are, the sweeter your muffins are going to be! I love to use pecans because they give it that real Southern flair. If you're watching your sugar, just leave out the extra sugar and that topping; they're still just as moist and delicious for a quick breakfast. They'll keep your family coming back for seconds, for sure!"
