Artichoke & Spinach Dip - Master Cookbook Recipe # 26
This rich and creamy dip is a crowd favorite, perfect for any gathering. By combining three types of cheese with marinated artichokes and well-drained spinach, you get a savory, thick dip that’s far better than anything from a store.

Ingredients
- 14 oz. can Marinated artichoke hearts (drained and chopped)
- 1/2 cup frozen spinach, drained and chopped
- Tip: For more flavor, use 32 oz. cooked, drained spinach and squeeze out excess moisture with a towel.
- 4 oz. cream cheese, room temperature
- 1 cup sour cream
- 1/4 cup olive oil
- 2 cloves garlic, pressed
- 8 oz. mozzarella, shredded
- 4 oz. Romano cheese, grated
- 8 oz. Parmesan cheese, grated (divided)
- 1 tsp ranch dressing mix
- 1 tsp onion powder
Instructions
- Prep Oven: Preheat your oven to 375°F.
- Mix Base: In a large bowl, blend the sour cream, softened cream cheese, ranch dressing mix, onion powder, and olive oil until the mixture is smooth.
- Season: Add the pressed garlic and mix well.
- Fold in Fillings: Fold in the chopped artichoke hearts, spinach, mozzarella, Romano, and half of the Parmesan cheese. Mix thoroughly until everything is evenly distributed.
- Bake: Transfer the mixture to a greased baking dish. Sprinkle the remaining Parmesan cheese over the top.
- Finish: Bake for 20 minutes, or until the dip is hot, bubbly, and the cheese is melted.
Notes
- The Secret to Thick Dip: Squeeze out as much liquid as humanly possible from the spinach before adding it. This prevents the dip from becoming watery.
- Golden Top: If you love a crispy, golden-brown crust, broil the dip for 2 to 3 minutes at the very end of the baking time.
- Serving: Serve warm with your favorite crackers, toasted bread, or tortilla chips.
- Make-Ahead Shortcut: If you're in a hurry, you can skip the oven entirely! Just microwave the mixture in a microwave-safe dish until warm and bubbly.
