This cherished recipe comes from Tammy’s Aunt Shirley Benefield and was her Uncle Noah’s absolute favorite. It is a dense, incredibly moist cake packed with fresh apples, coconut, and pecans, then finished with a rich, buttery caramel glaze that soaks right into the sponge.

Ingredients
- -1/2 cups salad oil
- 2 cups granulated sugar
- 3 large eggs
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla extract
- 3 cups apples, peeled and chopped
- 1 cup sweetened flaked coconut
- 1 cup pecans, chopped
- Glaze Ingredients:
- 1 cup light brown sugar, packed
- 1/2 cup salted butter
- 1/2 cup milk
Instructions
- Preheat: Preheat your oven to 325°F.
- Mix Base: In a large bowl, mix the oil, granulated sugar, and eggs until well blended.
- Combine: Add the flour, baking soda, salt, and vanilla. Use a mixer to blend the batter for 2 minutes.
- Fold in Extras: Stir in the chopped apples, coconut, and pecans by hand until evenly distributed.
- Bake: Pour the batter into a well-greased tube pan. Bake for 90 minutes.
- Cool: Remove from the oven and let the cake cool completely in the pan before flipping it out onto a cake plate.
- Make Glaze: In a small saucepan, combine the brown sugar, butter, and milk. Bring to a boil and stir constantly for 2 minutes.
- Finish: Pour the hot glaze over the cooled cake and enjoy!

Tammy's Tip: For the best flavor, use an apple that is both sweet and tart, like Golden Delicious, Honeycrisp, or Rome Beauty. Avoid Granny Smith for this particular recipe, as you want that natural sweetness to shine through!
