Ingredients

  • The Yeast Mixture:
  • 1 1/2 tsp fast-rise yeast
  • 2 tbsp warm water (baby-bottle warm)
  • 1 1/2 tsp granulated sugar
  • The Dough:
  • 2 1/2 cups self-rising flour (plus extra for kneading)
  • 1/4 cup granulated sugar
  • 1/3 cup shortening
  • 1 cup warm whole buttermilk

Instructions

  1. Activate Yeast: In a small bowl, combine the yeast, warm water, and 1 1/2 tsp sugar. Set aside until it becomes foamy.
  2. Mix Dry Ingredients: In a large bowl, whisk together the 2 1/2 cups of flour and 1/4 cup of sugar.
  3. Cut in Shortening: Use a fork or pastry blender to cut the shortening into the flour mixture until it looks like coarse crumbs with pea-sized pieces.
  4. Combine: Pour in the warm buttermilk and the yeast mixture. Stir until the ingredients are well blended and a soft dough forms.
  5. Knead: Sift a little flour onto the surface of the dough. Gently knead it 4 to 5 times, adding just enough extra flour to make it easy to handle.
  6. Shape: Form your biscuits by either cutting them out with a biscuit cutter or by rolling 1/4-cup portions of dough into smooth balls with your hands.
  7. Bake: Arrange the biscuits on a greased aluminum sheet pan. Bake at 500°F for 15 to 20 minutes, or until they are a beautiful light golden brown.
  8. Finish: Brush the tops with melted butter immediately after removing them from the oven, then turn them upside down on the pan to cool.

Notes

Tammy’s Tips:

  • Temperature Matters: Make sure your water is just "baby-bottle warm." If it's too hot, it will kill the yeast; if it's too cold, it won't rise properly.
  • The Flip: Don't skip turning them upside down! It keeps the tops soft and prevents the bottoms from getting soggy while they cool.
