White Milk Gravy - Master Cookbook Recipe # 613
A true Southern staple, this White Milk Gravy is the ultimate comfort food, known for its silky texture and rich, peppery flavor. Whether poured over fluffy biscuits or fried chicken, this classic roux-based gravy is an essential recipe for any home cook looking to master traditional comfort cooking.
This is recipe #613 in Tammy’s Master Cookbook.
Ingredients
- 1/2 cup Shortening or salted butter
- 1/2 cup Self-rising flour (placed in a sifter)
- 1 tsp Salt
- 1/2 tsp Black pepper
- 3 cups Milk
Instructions
- Melt: Start with a large skillet (at least 10 inches). Melt your shortening or butter over medium heat, then increase the heat to medium-high.
- Sift & Brown: Quickly sift the flour into the melted fat and whisk thoroughly. Add the salt and pepper, stirring constantly until the flour browns to a beautiful golden color and a nutty aroma fills the air.
- Thicken: Gradually pour in the milk while whisking vigorously. Continue to stir, scraping the bottom and sides of the pan to ensure a smooth, lump-free consistency.
- Finish: Once the gravy thickens, remove it from the heat immediately, as it will continue to thicken while standing. If it becomes too thick for your liking, simply whisk in a splash more milk until you reach your desired consistency.
- Serve: Best enjoyed fresh and hot over homemade buttermilk biscuits.

Tammy’s Tips
The secret to a perfect milk gravy is in the browning of the flour; don't rush this step, as that golden color is where all the deep flavor lives! I always recommend using a wire whisk and keeping it moving constantly to keep the texture perfectly velvety and smooth. If you find your gravy is thickening up too much before you're ready to eat, just keep a little extra milk handy to thin it back out to that perfect pouring consistency!
