Ingredients

  • 1 box White cake mix (Note: Use a mix that doesn't already contain pudding)
  • 3.4 oz. box Instant pistachio pudding mix
  • 1 cup Vegetable oil
  • 3 Large egg whites
  • 1 cup Sprite or Club Soda
  • ½ cup Chopped pecans or walnuts (optional, to stir in)

Instructions

  1. Prepare the Base: In a large mixing bowl, combine the dry white cake mix and the instant pistachio pudding mix.
  2. Mix: Add the egg whites, vegetable oil, and your choice of Sprite or Club Soda.
  3. The 4-Minute Rule: Beat all ingredients for exactly 4 minutes at medium speed. This ensures the cake gets that perfect, airy rise.
  4. Add Crunch: Gently stir in your chopped nuts by hand.
  5. Bake: Pour the batter into a greased 13x9 pan (or the pan size specified on the cake mix box). Bake at the temperature recommended on the box for 40 to 45 minutes, or until a toothpick comes out clean.
  6. Cool & Frost: Allow the cake to cool completely before frosting with the traditional whipped topping (Master Cookbook Recipe # 298).

Notes

Tammy’s Tips

For the lightest texture, make sure you use a cake mix without added pudding and stick to the 4-minute mixing time. This aerates the batter perfectly with the soda, giving you that signature "cloud-like" crumb that makes this cake a Southern staple!
