Vanilla Scones - Master Cookbook Recipe # 149

The secret to a great scone is not overworking the dough. By using self-rising flour and heavy whipping cream, you get a beautiful rise and a rich, tender crumb. These are great basic scones that you can easily customize with different spices or toppings.

Ingredients

  • 2 cups self-rising flour
  • 1/4 cup salted butter (room temperature)
  • 1/2 cup sugar
  • 1 large egg
  • 3/4 to 1 cup whipping cream (you may not need it all)
  • 1 1/2 tsp vanilla extract
  • Optional: Cinnamon or nutmeg for dusting
  • Optional: Large sugar crystals for topping

Instructions

  1. Cut Butter: In a large bowl, cut the room-temperature butter into the self-rising flour using a fork until the mixture resembles pea-sized crumbles.
  2. Add Sugar & Egg: Stir in the sugar, then mix in the egg until combined.
  3. Add Cream: Gradually add the whipping cream and vanilla extract. Stir until a dough forms and cleanly leaves the sides of the bowl. Note: Add the cream slowly; you might not need the full cup.
  4. Knead & Shape: Turn the dough onto a lightly floured surface and knead it gently. Pat the dough out into a circle about 1/4-inch high.
  5. Cut: Slice the circle into 8 even wedges.
  6. Top: Place the wedges on a parchment-lined baking sheet. Brush the tops with a little extra butter and sprinkle with your choice of spices (cinnamon or nutmeg) and large sugar crystals if desired.
  7. Bake: Bake at 375°F for 30 minutes until golden brown.

Notes

Tammy’s Tip: "Don't pour all that cream in at once! Every bag of flour is a little different, so just add it bit by bit until your dough comes together. These are just wonderful when they're still a little warm from the oven. If you really want to treat yourself, serve them with some homemade lemon curd,it's like a little bite of sunshine!"
