  • 8 oz. Pepperidge Farm stuffing mix (Cornbread style)
  • 1 onion, chopped
  • 3/4 cup chopped celery
  • Poultry seasoning (McCormick recommended)
  • Black pepper (to taste)
  • 26 oz. can cream of chicken soup (or 2-10.5 oz. cans)
  • 2 tsp chicken bouillon granules
  • 1 1/2 cups hot water
  • 2-14.5 oz. cans sliced potatoes, drained
  • 2-14.5 oz. cans green beans, drained
  • 1/4 cup salted butter

Instructions

  1. Layer the Base: Spray a large oval crockpot with cooking spray. Add half of both types of stuffing mix to the bottom and mix them well.
  2. Add Aromatics: Scatter the chopped onion and celery over the stuffing, then season with poultry seasoning and black pepper.
  3. Add Turkey: Place the thick-sliced turkey breast pieces in an even layer over the vegetables.
  4. Prepare the Sauce: In a separate bowl, whisk together the cream of chicken soup, bouillon granules, and hot water until smooth. Pour this mixture over the turkey.
  5. Add Vegetables: Layer the drained sliced potatoes and green beans on top. Finish by placing pats of salted butter over the vegetables.
  6. Slow Cook: Cover and cook on Low for 6 to 8 hours until the turkey is tender and the flavors have melded together beautifully.

Tammy's Tips

Using a mix of both traditional and cornbread stuffing gives this dish a wonderful texture and a hint of sweetness that pairs perfectly with the savory gravy. If you find your stuffing getting a little too dry, you can add an extra splash of chicken broth halfway through the cooking time. This is a simple way to enjoy a full turkey dinner any day of the week without all the fuss of roasting a whole bird!
