Ingredients

  • 1 can Grands biscuits (or homemade cornmeal crust)
  • 1-2 Sliced ripe red tomatoes
  • 3 Slices bacon, cooked crisp
  • 1/8 Cup chopped onions
  • 1/8 Cup chopped bell peppers
  • 1/2 Cup mayonnaise
  • 1 Cup mozzarella cheese
  • Seasonings: Black pepper & Italian seasoning

Instructions

  1. Prepare the Crust: Spray an 8 or 9-inch cake pan with cooking spray. Open the biscuits and pull each one apart into two equal thicknesses. Line the bottom and sides of the pan with the dough, pushing it up the sides. Bake the crust at 350°F for 15 minutes.
  2. Prep Toppings: While the crust bakes, microwave bacon on paper towels for 2 minutes or until crispy. Slice tomatoes and sauté the onion and peppers in a little bacon grease.
  3. Mix Filling: In a small bowl, thoroughly combine the mozzarella cheese and mayonnaise.
  4. Assemble: Once the crust is ready, press down the center to create a well. Layer the sliced tomatoes inside and sprinkle with black pepper. Add the sautéed onions, peppers, and crumbled bacon.
  5. Final Bake: Spread the mayo-cheese mixture evenly over the top and sprinkle with Italian seasoning.

Notes
