Tomato Mozzarella Salad - Master Cookbook Recipe # 573

This Tomato Mozzarella Salad is a fresh, vibrant dish that perfectly captures the flavors of summer. By using a mix of colored cherry tomatoes and marinated mozzarella balls, you get a beautiful presentation with very little effort. The Italian marinade from the cheese acts as a built-in dressing, making this one of the quickest and most delicious salads you can toss together!

Ingredients

  • 2 pints cherry tomatoes (mixed colors), halved
  • 1 1/2 cups Italian marinated mozzarella balls (keep the juices!)
  • 1/2 cup red onion, sliced thin
  • Balsamic vinegar, for drizzling

Instructions

  1. Prep the Tomatoes: Slice the cherry tomatoes in half and place them into a large mixing bowl.
  2. Combine: Add the thinly sliced red onion and the marinated mozzarella balls to the bowl.
  3. Dress: Pour the juices from the marinated mozzarella over the salad.
  4. Finish: Drizzle with balsamic vinegar to your liking.
  5. Toss and Serve: Gently toss everything together so the tomatoes and onions are well-coated, and serve immediately!

Tammy's Tips

The key to this salad is the marinated mozzarella,don't throw away those juices in the container, because that's where all the good herbs and oils are! Using a variety of tomato colors makes this look like a gourmet dish on any table. It’s a perfect light side dish for grilled chicken or a nice steak. DELICIOUS!
