Tammy’s Squash Puppies

These are a delicious Southern twist on a traditional hush puppy, perfect for summer when squash is in abundance.

Ingredients

  • Yellow Squash: About 2-3 medium squash, diced very small (Tammy recommends cutting them thin and then into small pieces rather than steaming them to keep the texture).
  • Self-Rising Cornmeal: Approx. 1 to 1 ½ cups (adjust for thickness).
  • All-Purpose Flour: Approx. ⅓ cup.
  • Egg: 1 large egg, lightly beaten.
  • Buttermilk: Added gradually until you reach a thick, "hush puppy" batter consistency.
  • Onion: Sweet Vidalia onion, finely chopped (about ¼ to ½ cup).
  • Jalapeños: Fresh or diced jarred jalapeños (to taste).
  • Cayenne Pepper: A pinch (optional, for extra heat).
  • Cooking Oil: A small splash for the batter, plus plenty for frying.
  • Salt & Pepper: To taste.

Instructions

  1. Prepare the Squash: Slice the squash very thinly and then dice into small bits. Place them in a bowl and season with salt and pepper.
  2. Mix the Batter: In a large mixing bowl, combine the cornmeal, flour, diced onions, jalapeños, and cayenne (if using). Add the beaten egg and a small splash of oil.
  3. Add Buttermilk: Gradually stir in buttermilk until the batter is thick enough to hold its shape on a spoon, similar to hush puppy batter.
  4. Fold in Squash: Add the finely diced squash to the batter and mix well.
  5. Heat the Oil: Heat your oil in a skillet or wok over medium heat. You want a slightly lower temperature than usual (not screaming hot) so the squash has time to cook through without the outside burning.
  6. Fry: Drop the batter by spoonfuls into the hot oil. Fry until they are a deep golden brown on all sides.
  7. Test for Doneness: Break one open to ensure it’s cooked through in the center and not doughy.
  8. Drain and Serve: Remove from the oil and drain on paper towels. Serve hot!

Notes

Tammy’s Tip: If you make these, you don't even need biscuits because these are the "best kind of fried bread!"
