Tammy's Refried Beans - Master Cookbook Recipe # 652

Take your Mexican-style dinner to the next level with these incredibly creamy and flavorful refried beans. By using an electric mixer, you get a smooth, consistent texture that incorporates the cheese, sour cream, and spices perfectly. These are a far cry from the canned version and will quickly become a family favorite!

Ingredients

  • 16 oz Cooked pinto beans (homemade is best!)
  • 2 cups Bean broth (reserved from cooking your beans)
  • 2 cups Shredded Mexican cheese blend
  • 8 oz Sour cream (or mayonnaise for extra richness)
  • 1/2 cup Dehydrated onion (or 1 medium onion, finely diced)
  • 2 Tbsp Fajita seasoning (Tammy recommends Badia brand)
  • 2 tsp Onion powder

Instructions

  1. Combine: Place the cooked pinto beans and the reserved bean broth into a large mixing bowl.
  2. Season: Add the onion (dehydrated or fresh), onion powder, fajita seasoning, shredded cheese, and sour cream (or mayo).
  3. Blend: Using an electric hand mixer, blend all the ingredients together until the beans are mashed and the mixture is well-incorporated and creamy.
  4. Heat: Transfer the mixture to a saucepan or skillet and heat over medium-low until the cheese is completely melted and the beans are hot throughout.
  5. Serve: Enjoy as a side dish, a dip, or as a filling for burritos and tacos!

Notes

The electric mixer is the "secret weapon" here,it gives you that restaurant-style smooth texture without all the arm work! While pinto beans are the classic choice, don't be afraid to try this recipe with red kidney beans or even black beans for a different flavor profile.
