Tammy's Mile High Pie - Master Cookbook Recipe # 463

Inspired by family tradition, this "Mile High Pie" is a towering, decadent dessert that brings together the best of a banana split and a classic cream pie. With layers of pudding, fresh fruit, crunchy pecans, and chocolate, it truly lives up to its name.

Ingredients

  • 1 Vanilla Wafer Crust (Master Cookbook Recipe # 456)
  • 3.4 oz. box vanilla instant pudding (prepared according to box instructions)
  • 16 oz. whipped topping (Cool Whip)
  • 2 bananas, sliced (and "seeded",see Tammy’s Tips!)
  • 8 oz. can crushed pineapple, well-drained
  • 1/4 cup maraschino cherries, halved
  • 1/4 cup chopped milk chocolate
  • 1/4 cup pecans, chopped
  • 1/4 cup flaked coconut, toasted
  • Optional: Ripe, sliced strawberries

Instructions

  1. Base Layer: Spread the prepared vanilla pudding evenly into the bottom of your cooled vanilla wafer crust.
  2. Cream Layer: Top the pudding with a 1/2-inch layer of whipped topping.
  3. Fruit & Crunch: Layer on the sliced bananas, drained pineapple, cherry halves, chopped milk chocolate, and pecans. If you're using strawberries, add them now as well.
  4. The "Mile High" Top: Cover the fruit and nut layers with the remaining whipped topping, piling it high toward the center.
  5. Garnish: Sprinkle the toasted coconut over the top for a beautiful, golden finish.
  6. Chill: Refrigerate for at least 2 hours before serving to ensure the layers stay perfectly stacked when sliced.

Notes

Tammy’s Tips

My Granny always liked to "de-seed" her bananas! To do this, just slice the banana lengthwise and use the tip of a spoon to gently scrape out that center line of seeds before slicing them into rounds. It makes the banana extra smooth! To keep this pie looking its best, make sure your pineapple is drained very well so the juice doesn't run into your pudding layer. This is a tall, impressive pie, so use a sharp, cold knife to get those perfect "Mile High" slices!
