These are not your average canned green beans. This recipe uses a traditional technique to transform simple canned beans into a rich, caramelized delicacy. By cooking them down until the natural sugars and oil glaze the pot, you create a deep, savory flavor that is truly legendary.

Ingredients

  • 3 cans (14.5 oz each) Green beans (do not drain)
  • 1/8 cup Cooking oil
  • 1 Tbsp Granulated sugar
  • 1/2 cup Water (for deglazing)

Instructions

  1. Combine: Add the canned green beans (with their juice), cooking oil, and sugar into a nonstick saucepan.
  2. Boil: Bring the mixture to a boil and continue cooking on high heat.
  3. The Sizzle: Continue boiling until the liquid is almost gone. At this point, the beans will begin to sizzle. Do not leave the kitchen; you must watch them closely now!
  4. Caramelize: The oil and sugar will begin to caramelize on the bottom and sides of the pot. You will see the sides of the pot turning a rich brown.
  5. Glaze: Use your spoon to rub the beans against the browned sides of the pot. The moisture remaining in the beans will naturally deglaze the pot, coating the beans in that flavorful "liquid gold."
  6. Deglaze: Once you smell that wonderful caramel aroma and the beans are well-glazed, remove from heat. Pour in about 1/2 cup of water and stir to ensure all the caramelization is mixed into the beans and not left on the pot.
  7. Finish: If you like, you can lightly smash some of the beans with your spoon to break them apart and thicken the sauce before serving.

Tammy’s Tips

"Many people do not cook them down to the caramelization stage and complain that they are sweet. This is because the directions are not followed." The magic happens when the sugar transforms into a savory glaze,it's the secret to why these are the best beans you'll ever taste! If you're making a different amount, just remember: use 1 Tbsp oil and 1 tsp sugar for every can of beans.
