Tammy's Crazy Soup - Master Cookbook Recipe # 628
This recipe is a flavorful twist on a classic Mexican-style soup, packed with hearty beans, corn, and tender chicken. It’s called "Crazy Soup" because of the unique combination of ingredients,including chili with beans and salsa,that create a deep, complex flavor with very little effort.

Ingredients
- 2 Chicken breasts, bone-in
- 2 tsp Chicken bouillon granules
- 2 cups Chicken stock
- 15 oz can Chili with beans
- 28 oz can Petite diced tomatoes
- 28 oz can Pinto beans, drained
- 15 oz can Kidney or black beans
- 7 oz Frozen white shoepeg corn
- 1 medium jar Salsa
- 1 medium Onion, chopped
- 1 Tbsp Taco seasoning
- 2 Tbsp Fajita seasoning
- 1 tsp Onion powder
- 1/2 tsp Black pepper
- 1/2 tsp Salt
Instructions
- Prep the Chicken: Place the chicken breasts and bouillon in a saucepan. Cover with water and simmer for 1.5 hours. Turn off the heat and let it cool. Pick the meat from the bones and set aside; reserve the broth and meat for the soup (discard bones and skin).
- Combine: In a large stockpot, combine the prepped chicken and broth with the chicken stock, chili, diced tomatoes, all the beans, corn, salsa, onion, and all the seasonings.
- Cook: Heat over medium for 15 minutes, stirring frequently to ensure it doesn't stick to the bottom.
- Simmer: Turn the heat down to low and let it simmer for another 15 minutes to allow the flavors to meld.
- Serve: Serve hot in bowls topped with a dollop of sour cream, shredded Mexican cheese, and crunchy tortilla chips.

Tammy’s Tips
The secret to this soup is using bone-in chicken breasts to create that rich, homemade broth base. Using a medium salsa allows you to control the heat,go with a "hot" salsa if you want a real kick! This soup is incredibly hearty and actually tastes even better the next day after the spices have had more time to sit.
