Swiss Steak - Master Cookbook Recipe # 82
This is a true Collard Valley Cooks classic. By taking a simple round steak and "beating the hound out of it" to tenderize it, then slow-simmering it with peppers, onions, and tomatoes, you get a fork-tender beef dish that creates its own incredible gravy.

Ingredients
- Meat: 3 round steaks (1/2-inch thick)
- Produce: 1 large onion (chopped), 1 bell pepper (chopped), 3 garlic cloves (sliced)
- Pantry: 14.5 oz can diced tomatoes, 2 1/2 cups beef stock
- Coating/Frying: Self-rising flour, Corn oil
- Seasoning & Spices: Worcestershire sauce, Onion powder, Roasted garlic powder (Bidia brand), Paprika, Steak seasoning (Weber Steak 'n Chop), Unseasoned meat tenderizer, Salt, and Black pepper
Instructions
- Prep the Beef: Set your steaks out for 1 hour to reach room temperature. Trim off the fat around the edges so the meat can flatten evenly.
- Tenderize: Sprinkle unseasoned meat tenderizer and black pepper on both sides, then lightly dredge in flour. Use a meat mallet to beat the steaks very well on each side until the fibers break down and the meat is flat and tender. Cut each tenderized steak in half.
- Brown: Dip the portions in self-rising flour. Fry in a preheated skillet with oil until golden brown on both sides. Remove the meat from the pan.
- Sauté Veggies: Add the chopped onion and bell pepper to the skillet drippings. Cook for 3 to 4 minutes until they begin to soften.
- Simmer: Return the beef to the skillet. Sprinkle with garlic, onion powder, roasted garlic powder, paprika, steak seasoning, and a few splashes of Worcestershire sauce. Add the diced tomatoes and beef stock.
- Slow Cook: Cover with a tight lid and simmer on low for two hours until the beef is incredibly tender.
