Ingredients

  • 1 cup shortening
  • 1 cup salted butter, room temperature
  • 3-1/2 cups granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 9 large eggs, room temperature
  • 2 cups cooked and whipped sweet potatoes (see instructions)
  • 3 cups all-purpose flour
  • 2 tsp vanilla extract
  • 1 tsp cinnamon or pie spice (optional)

Instructions

  1. Prepare Sweet Potatoes:
  2. Option 1 (Quick): Use Bruce’s Candied Yams. Drain well, heat in a microwaveable bowl on high for 4 minutes, and blend with an electric mixer until smooth.
  3. Option 2 (Best Flavor): Bake fresh sweet potatoes until tender. Once cool, peel and blend until completely smooth.
  4. Cream: Preheat your oven to 350°F. Using an electric mixer, cream the shortening and butter together. Add the sugar and beat until light and fluffy.
  5. Combine: Mix in the baking powder and salt. Add the eggs one at a time, beating well after each addition.
  6. Incorporate Potatoes: Blend in the 2 cups of smooth sweet potatoes.
  7. Mix Batter: Gradually add the flour, 1/2 cup at a time. Stir in the vanilla and optional spices. Beat the batter on medium-low speed for exactly 2 minutes.
  8. Bake: Pour the batter into a greased 12-cup Bundt pan (it should be about 3/4 full). Bake at 350°F for 40 minutes, then reduce the oven temperature to 325°F and bake for an additional 50 minutes.
