Ingredients
- 8 oz Dried split peas
- 4 cups Chicken broth
- 6 to 7 Pearl onions
- 5 Tbsp Salted butter (divided)
- 1 tsp Salt
- 1/4 tsp Black pepper
- As needed Water
Instructions
- Initial Boil: Place the dried split peas in a saucepan and cover with the chicken broth. Add salt, pepper, and the peeled pearl onions. Bring the mixture to a boil and cook for 20 minutes.
- Overnight Soak: Remove from the heat and allow the mixture to cool to room temperature. Ensure the peas are still fully covered with liquid (add a little water if necessary), then cover and refrigerate overnight.
- Simmer: The next day, place the saucepan over medium heat. Add more water if needed to ensure the peas are covered, and simmer until the peas are completely tender.
- Create the Base: For a perfectly smooth soup, use an immersion blender directly in the pot, or press the mixture through a hand-held mesh strainer into a clean bowl.
- Finish: Stir in 3 tablespoons of butter. If the soup is too thick, stir in a small amount of water until it reaches your desired creamy consistency.
- Serve: Ladle into warm bowls and serve immediately.

Tammy’s Tips
The overnight soak is the real secret here,it allows the peas to hydrate evenly, which results in a much creamier texture once they are simmered and blended. If you love a bit of extra smokiness, you can sauté the pearl onions in a little of the butter before adding the broth and peas. This soup is wonderful served with a side of toasted ham and cheese sliders!
