Ingredients

  • 1 Spaghetti squash
  • 1/4 cup Salted butter
  • Salt and black pepper to taste

Instructions

  1. Soften the Squash: Place the whole squash in the microwave for a couple of minutes. This softens the outer shell, making it much easier and safer to cut.
  2. Slice and Prep: After letting it cool for a few minutes, use a sharp knife to slice the squash in half lengthwise.
  3. Microwave: Place the halves on a shallow pie plate and microwave for 4-5 minutes until the flesh is tender.
  4. Create the "Noodles": Let the squash cool enough to handle, then use a spoon or fork to scrape the flesh out. It will naturally separate into long, spaghetti-like strands.
  5. Season and Serve: Add the salted butter, salt, and pepper to taste. Toss gently until the butter is melted and the strands are well-coated.
  6. Enjoy as a warm side dish or use it cold in salads just like you would a noodle!

Notes

Tammy’s Tips

When scraping out the squash, using a fork instead of a spoon can help you get those distinct, long "spaghetti" strands without mashing them. If you want to add a little extra flavor, try mixing in some garlic powder or a sprinkle of Parmesan cheese while the squash is still hot. It’s a wonderful, low-carb way to satisfy a pasta craving while still getting in your veggies!
