Shrimp & Grits - Master Cookbook Recipe # 398
This isn't your average shrimp and grits; this is a creamy, cheesy, Southern comfort dish that is surprisingly easy to whip up. Ingredients
- For the Grits
- 1 cup Quick White Grits
- 2 1/2 cups Milk
- 1 1/2 cups Water
- 1/4 cup Salted Butter
- 4 oz. Shredded Cheese
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- For the Shrimp
- 1 lb. Raw Shrimp (peeled and deveined)
- 1 cup Salted Butter
- 1 small Onion (peeled and sliced thin)
- 1/2 Sweet Red Bell Pepper (sliced thin)
- 1 tsp Soul Seasoning (or your favorite seafood seasoning)
Instructions
- Start the Grits: In a tall batter bowl (this prevents spills while cooking), combine the grits, milk, water, salt, and pepper.
- Microwave: Cook on high for 4 minutes, then remove and stir. Continue microwaving at 1-minute intervals, stirring in between, until the mixture is thick and creamy.
- Finish Grits: Stir in the 1/4 cup butter and the shredded cheese. Set aside.
- Sauté Veggies: In a skillet over medium-low heat, melt the 1 cup of butter. Add the sliced onion and red pepper. Sauté until they are nice and soft.
- Cook the Shrimp: Increase the heat slightly and add the shrimp and seasoning to the skillet. Cook for 2 to 4 minutes, just until the shrimp curl and change color. Do not overcook them!
- Assemble: Spoon the creamy grits into bowls and top generously with the shrimp, veggies, and plenty of that delicious butter dripping from the pan.

The secret to this dish is all in that tall batter bowl,grits like to bubble up, and that extra room keeps your microwave clean! Using milk instead of just water makes these grits incredibly rich. When it comes to the shrimp, keep a close eye on them; as soon as they turn pink and curl into a "C" shape, they are perfectly done. That seasoned butter in the skillet is pure gold, so make sure every bowl gets a good drizzle of it!
