This recipe for Settlers or Cowboy Beans is a hearty, sweet, and smoky classic that’s always a hit at potlucks and family gatherings. By combining four different types of beans with savory ground beef and salty bacon, we create a dish that is thick, rich, and incredibly satisfying. Ingredients

  • 1/2 lb. Ground beef
  • 1/2 lb. Bacon (chopped)
  • 1 Onion (chopped)
  • 15 oz. can Pinto beans
  • 15 oz. can Pork n’ beans
  • 15 oz. can Butter beans
  • 15 oz. can Kidney beans
  • 1/3 cup Light brown sugar
  • 1/4 cup Ketchup
  • 1/4 cup BBQ sauce
  • 1 Tbsp Mustard
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Chili powder

Instructions

  1. Brown and Drain: In a large skillet over medium-high heat, cook the ground beef, chopped bacon, and onion together until the meat is browned and the onions are translucent. Drain off the excess grease.
  2. Combine: In a large mixing bowl (or directly in your baking dish), combine the cooked meat and onion mixture with all four cans of beans (including their juices).
  3. Season: Stir in the brown sugar, ketchup, mustard, BBQ sauce, salt, pepper, and chili powder. Mix everything together until well combined.
  4. Bake: Transfer the mixture into an oven-safe baking dish.
  5. Slow Cook: Bake at 350°F for 2 hours. This long cook time is the secret to getting that perfect, thick consistency.

Notes

Tammy’s Tips: These beans are fantastic with a big slice of homemade cornbread or even some buttery garlic toast for dipping! If you want to change things up and add even more Southern flair, try using Swaggerty’s Farm breakfast sausage instead of the ground beef,it adds a wonderful spicy kick that pairs perfectly with the sweetness of the beans.
